Try powering it with 5V instead. It says on your ESP8266 that 5V is recommended. I'm using a S-Video to Component transcoder (Koryuu). It just converts the signal, no scaling or lag. I'm getting wierd screen issue. The picture flashes in and out and has a tearing like effect.
